A clear and contrasting cuisine

The concept here is simple: surprise with basic ingredients. Each dish is crafted to highlight and rediscover the flavors of the ingredients. Mastering the traditional techniques, especially in creating sauces, adds richness and indulgence. Then, we play with textures, temperatures, a hint of acidity or bitterness to create surprises and make each bite unique.

To start, the parmesan shortbread with goat cheese basil cream sets the stage for a delightful culinary experience. For the first course, savor the first chanterelles of the season, roasted in meat juices, with tomatoes and coriander for freshness, and poppy seeds for a crispy texture. And then, brace yourself for the most heavenly gnocchi ever tasted, crispy on the outside, soft on the inside, served with a savory meat jus and topped with Parmesan shavings.

The artichoke prepared in various textures, from smooth and flavorful to crispy and bitter chips, the smoked duck breast paired with a Granny Smith apple for a burst of acidity.
