For those who aren't familiar, socca is a thin pancake made from chickpea flour, water, and olive oil, cooked over a wood fire until it has a golden crust and a soft center. This Nice specialty is best enjoyed hot, sprinkled with pepper, and Papa Socca is already making quite the splash! Open since last February, this project is brought to life by Virginie and Pascal, two passionate people who decided to reintroduce this local gem to the residents of Nice, and their success since opening is looking pretty promising!
