Everything begins with a meeting. Laurent's encounter with Nice: that special light, the way the locals take their time, that Mediterranean energy that catches you off guard. It’s a delight! Originally from Tarn, a restaurateur for over twelve years, building on his first experience at Petits Pois which he ran with his brother in the capital, Laurent had not planned on leaving everything behind. Yet, after many visits to Nice with his partner Marie, a native of the city, the obvious choice became clear. Leaving Paris, unpacking his bags on the Côte d'Azur, and building something real. Not just opening a restaurant, but truly settling in, becoming a part of the neighborhood, creating a place that tells both his journey and the spirit of the city. Jadis was born from that intention, on June 1, 2025, just a few streets behind the Lympia port.

The soul of the bistro, without the dust

What Laurent wanted to create with Jadis is a modern answer to an age-old question: what does a true French bistro look like in 2025, in a city like Nice? And the answer can be found in every detail of the place. The light, solid wood, the matte black polished concrete, the vintage wall sconces, the retro parquet flooring. A decor that evokes the spirit of great Parisian brasseries without falling into frozen nostalgia. The result is warm, effortlessly elegant, and incredibly inviting!

In the dining room, Laurent is joined by Brian, who shares the same passion for characterful wines and regional dishes. The wine list, developed in direct collaboration with passionate producers, is one of the great strengths of the house: sharp references, discoveries from small estates, and bottles that have just as many stories to tell as the plates that accompany them. At Jadis, you come to eat, you stay for the wine, and above all, you return for everything else!

A generous cuisine, made for pleasure

The menu at Jadis is the cuisine that Laurent loves to eat: a steaming marrow bone with fleur de sel, Burgundy snails, reinvented mayo eggs av.

a truffle mayonnaise or a hint of homemade rouille for the Provençal version. Starters that set the mood: friendly, generous, and without any fuss.

Next come the dishes that truly warm your heart. A duck confit slow-cooked for hours, with crispy skin and buttery mash. A flank steak with shallot sauce. A sausage and lentil dish just how we love it. And a few plates that change with the seasons: scallops in winter, carefully crafted vegetarian options, a twist on the classic cordon bleu with breaded eggplant, comté, and arugula, all to keep the menu lively and never stagnant. Everything is homemade, thoughtfully crafted down to the smallest details, and executed without a hitch.

One thing's for sure: in the landscape of Nice's restaurants, Jadis has already secured its place. And a sincere bistro, well-maintained, cooked with passion, clearly stands the test of time. For us, it's a big yes!
