Izakaya'Joyi: guaranteed change of scenery!
Attention, this is the cream of the crop. Here, we indulge in a decor that is simply amazing. A wooden, minimalist yet warm atmosphere, a few low tables typical of the country, it's simple, you'll feel like you're in Tokyo (if you haven't been to Tokyo, go to Izakaya'Joyi, you can still fool your friends on Instagram). Izakaya'Joyi is both a sushi bar, a Japanese bistro (also called a "Kotatsu") and a grocery store. On the plate, in addition to the "classic" offerings, you will find more refined dishes like grilled fish. In the evening, several set menus, starting from 29 euros. Yes, it's quite expensive, but it's a one-way ticket to Tokyo! At lunchtime, the set menus are more affordable, starting from 14.90 euros. And the chef, Anthony N'guyen, was crowned sushiman 2015!

Paku Paku : the (real) Japanese canteen
A true cocoon address in Talensac, Paku Paku is the ideal place to discover authentic Japanese recipes, the ones that Japanese people have in their plates every day. In addition to the amazing okonomiaki, this funny and delicious omelette-pancake, you can discover traditional dishes such as udon, sticky and cooked noodles in various ways, donburi, rice bowls accompanied by simmered meats or fish, onigiri, Japanese rice sandwiches and other Japanese curiosities. It is entirely dedicated to this typically Japanese dish made of noodles bathing in a broth based on fish or meat, all seasoned with miso or soy sauce. Ichi-go Ichi-e: ramen in the heart of rue Fouré
This address quietly opened in August 2020, between two lockdowns, in the heart of rue Fouré, a famous street known for its dining options in Nantes. The locals seem to have embraced this new spot, which quickly found itself serving up to 90 customers a day despite COVID restrictions. On the menu at this charming spot: seven different ramen dishes (including a vegetarian option) cooked by Maël and his partner Toru Hirae. In addition to ramen, you can also find fried chicken and gyoza. 100% homemade, 100% deliciousness!
