They are traditionally enjoyed during mid-Lent, at the carnival in Nantes. But it's never too early to start, there's no season to treat yourself and devour plenty of them, bottereaux are enjoyed all the time and for that, there's nothing better than making them at home! Let's get started with the recipe:
Ingredients (for about 50 pieces):
- 350g of flour
- 60g of butter
- 3 eggs
- 10cL of milk
- 2 tbsp of rum (optional)
- 1 tbsp of sugar + sugar for coating the bottereaux
- 1 packet of baking powder
- 1 vanilla bean
- 1 pinch of salt
Preparation:
In a large bowl, mix the flour, 1 tbsp of sugar, vanilla beans, baking powder, and salt.
Add the slightly warmed milk (about 37-40°C).
Add the eggs, softened butter, and rum. Knead everything together.For a few minutes by hand. Form the dough into a ball, cover it and let it rest in the refrigerator for 1 hour.
Roll out the dough to about 1cm thick on a floured work surface and cut into diamond shapes.
Fry the bottereaux in a deep fryer at 180°C for a few minutes. You may need to fry them in batches. Once they are golden brown, remove the bottereaux from the fryer and place them on paper towels.
Roll the bottereaux in caster sugar and enjoy them warm ideally.
