The excellent recipe from the Esthète pastry shop

Recipe for a cake serving 6 people:
Nantes cake batter
Cane sugar 140 g
Baratte butter 110 g
Valencia almond powder 105 g
3 organic eggs
T55 wheat flour 35 g
Pinch of Guérande salt
15g rum
Start by mixing the softened butter with the sugar. Add the almond powder, salt, then the eggs gradually. Let the mixture whiten and increase in volume.
Add the flour and rum with a spatula.
Pipe into a greased 20 cm round cake mold.
Bake at 170°C for 22 minutes.
Soak with 20-grade rum and unmold before completely cooling.
Rum glaze:
Icing sugar 100 g
Water 10 g
Guadeloupe rum 15 g
Mix the ingredients together. Warm slightly to thin out the glaze if needed.
Glaze the Nantes cake with a very thin layer of glaze.
