What if we enjoyed a piece of Alsace for the meal? The flammekueche, more commonly known as "tarte flambée", is an integral part of Alsatian culinary heritage. Traditionally composed of a thin, crispy bread dough covered with a mixture of cottage cheese and thick cream, seasoned with a blend of spices and topped with small lardons and finely chopped onions, it is baked in a wood-fired oven, directly on the stone. So much for the presentations.

Today, we're making your mouth water because a flammekueche bar has opened in the heart of Nantes at 14bis rue Talensac: Flam's. In this spot, you'll find traditional flammekueches jazzed up with garlic and chives, fresh mushrooms, or even gratin-style. But there are also more original creations like the Vegetarian (zucchinis, tomatoes, and mushrooms), Saint-Marcellin, Primeur (goat cheese, tomatoes, pesto, and chives), Goat Honey, Munster, Burger (with minced meat), Mexican, Chicken, Montagnarde (with raclette cheese), or Nordic (with smoked salmon and dill).

If the restaurant also offers other Alsatian creations like Spaetzles with various flavors, our hearts melt for the all-you-can-eat traditional flammekueches for €13. An orgy of Flam's (as they are called there) that you won't leave unscathed. And if your heart (and stomach) desires, you can choose the all-you-can-eat creation flammekueches formula (with a starter or a dessert) by adding an extra €5.5.
