A proposal born from the audacity of the producers
Behind the Guinguette Fish & Sheep are 3 local producers: Rachel Carroget, a shepherd at the farm of audacity, Nicolas Guerin, a professional fisherman in the Loire, and Matthieu Perrault, heir to the 10th generation of his family of fishermen. Together, they submitted their project to the municipality of Mauges-sur-Loire and had the opportunity to transform this former German camp from the Great War into a unique restaurant location.
A place full of history, reinvented
The Guinguette Fish & Sheep has settled in the former quarry of Saint-Florent-le-Vieil, where the rocks used to build the Loire riverbanks were once extracted. Today, this peaceful and welcoming place features reclaimed wooden furniture, creating a cozy ambiance. The place also reveals family stories, like that of Matthieu, whose ancestors were dThey are fishermen and salt smugglers on the Loire, defying the customs officers of the region.

An ephemeral and friendly concept
The Guinguette Fish & Sheep unfolds in an ephemeral way each year, from June 15th to September 15th. Its concept is based on showcasing local cuisine with products from the region. No reservation needed here, just show up and grab a seat if one is available. It's a chance to share a table and conversations with local residents and cyclists from the Loire à Vélo passing by. The guinguette becomes a place for social, cultural, and intergenerational mixing.
