It's official: Montpellier has a new Michelin-starred restaurant! This Monday, March 31, during the grand ceremony of the Michelin Guide 2025, the restaurant Ébullition claimed its very first star. This is a great honor for the establishment on Rue du Pila-Saint-Gély, passionately led by chef Boris Caillol and his partner Coralie Semery.

Already praised by Gault & Millau and TripAdvisor, Ébullition joins the very exclusive circle of starred restaurants in Montpellier, alongside Jardin des Sens, Nouveau Leclère, Reflet d’Obione, Pastis, and La Réserve Rimbaud. And as happy moments don’t come alone, Coralie Semery also received the service award, a distinction that celebrates the excellence of the experience offered to diners.

However, the party wasn’t all joy for everyone. Just a few days ago, the Michelin Guide also revealed the list of restaurants that have lost their star. In Hérault, Äponem, located in Vailhan, lost its star, while L’Arrivage in Sète and La Table de Castigno in Assignan had to close their doors.
