It's official: Montpellier has a new starred restaurant! This Monday, March 31, during the grand ceremony of the 2025 Michelin Guide, the restaurant Ébullition earned its very first star. This is a wonderful recognition for the establishment on Rue du Pila-Saint-Gély, passionately run by chef Boris Caillol and his partner Coralie Semery.

Already praised by Gault & Millau and TripAdvisor, Ébullition now joins the very exclusive circle of starred restaurants in Montpellier, alongside Jardin des Sens, Nouveau Leclère, Reflet d’Obione, Pastis, and La Réserve Rimbaud. And as if that wasn’t enough joy, Coralie Semery also received the service award, a distinction that celebrates the excellence of the experience offered to guests.

But the celebration wasn't meant for everyone. A few days ago, the Michelin Guide also unveiled the list of restaurants that lost their star. In Hérault, Äponem, located in Vailhan, has lost its star.macaron, while L’Arrivage in Sète and La Table de Castigno in Assignan had to lock their doors.

A new chapter begins for some, while others write a fresh story. For Montpellier, Ébullition is proof that the city continues to attract and nurture culinary talents. It's a must-try, before it becomes impossible to get a reservation!
