This young chef from Montpellier has just won an award at the Gault & Millau 2025

A catchy title: “Grand de Demain”. In other words, a true spotlight on one of the most promising talents in the local gastronomic scene. At just 30 years old, Clément Briand-Seurat already has an impressive track record. Having worked in starred establishments and inspired by big names like Gilles Goujon and Lucas Carton, he honed his culinary skills between London, Cap d’Agde, Chamonix... before returning to the Occitan lands to settle in Matelles, at the Pic Saint-Loup restaurant. Then, at the beginning of 2023, he takes a big leap: he opens Céna, right in the heart of the Écusson, in partnership with the Tandem group. A chic and sensitive table, where every dish tells a story of the land, a memory, an emotion.

Three awards in three years

This new award adds to a wonderful series. In 2022, Clément was already recognized as a “Young Talent”. In 2023, he joined the Gault & Millau guide in the selection of “109 chefs and recipes to watch closely”. And in 2025, he's been elevated to “Grand of Tomorrow”, a true promise for the future. His restaurant also earned two Toques in the guide, ranking it between 13 and 14.5/20, a lovely score for a young establishment that already knows exactly where it’s headed…
