La Nipote, the queen of Italian pinsa that delights just near Montpellier

You don't know about pinsa? Don't worry, we'll explain it to you quickly because really, you can't miss out! Basically, it's a little delight straight from Rome. Unlike traditional pizza, its dough is made from a mix of four different flours (wheat, rice, soy, and semolina) and undergoes a 72-hour fermentation. The result? A light, super crispy crust on the outside and soft on the inside and, most importantly, it's way easier to digest than regular pizza dough!

Plus, we’re super lucky because at La Nipote, they serve up some really awesome stuff with their delicious recipes made mainly from fresh ingredients! On the menu you’ll find various pinsas like the red ones (margherita, 4 seasons, Neapolitan…), the white ones (goat cheese with honey or the tonito, a pinsa with tuna and goat cheese) and unique creations (like the 4 cheeses and the mama lova, a pinsa with pesto sauce, mozzarella, pistachio mortadella, and burrata).

With soft lighting, a cozy décor, and a staff that makes you feel right at home, you’d think you were in a little Roman trattoria.
