Le Fioupelan : Aioli revisited

Among Cyrille Lemaire's signature dishes, we find a cleverly revisited version of the famous, typical and essential Provençal dish, aioli. At Le Fioupelan, green beans are replaced by sugar snap peas in raw or grilled versions, cauliflower comes in different forms, and young carrots are chosen. As for the fish, cod is grilled and finished in the oven. And the highlight of the show, the traditional aioli sauce made with mayonnaise is garnished with finely chopped garlic pieces.
