The Baleine à Cabosse

Chocolatier Marseille : La Baleine à Cabosse ©
La Baleine à cabosse is without a doubt one of the most famous chocolatiers in Marseille. She is one of the few French chocolate craftsmen to work the chocolate on site, from bean to bar. The two chocolate lovers - Claire & Aurélien - behind La Baleine, set out to discover this essential French treat, all the way to Colombia, to bring back all the secrets and flavors to Marseille. It is there that they found the bean-to-bar process that would later make their chocolaterie on rue Paradis famous. Behind the chocolate shop in downtown Marseille, Le temps d'un chocolat, we find the master chocolatier Claude Krajner. Actively involved in promoting sweet treats through the Marseille association Sud'crées, he offers cocoa lovers in all its forms unique flavors. Self-proclaimed choc'addict since a young age, he works with chocolate in various ways, from the most classic to the most experimental (vegan bars, "gold ingots").

He even goes beyond what is expected of a chocolatier, offering what he calls travel cakes (elevated cakes) and If Fadas (small crispy chocolate and crepe lace bites).

Thanks to La Chocolatière de Marseille, Marseille is officially a delicious chocolate bar.The Marseillaise® bar is a pure chocolate wonder crafted in an artisanal way without butter or cream. This chocolate shop gets its name from a treat that can be considered a true Provençal chocolate specialty: the espérantines. L'Espérantine is a unique chocolate that will easily charm gourmets, chocolate lovers, fans of authentic products, and Provençal flavors. The Marseille Espérantine was voted "Best Confectionery" at the Intersuc Salon in Paris in the 2000s. The uniqueness of this chocolate? The touch of olive oil that gives it an incomparable flavor and a look recognizable among a thousand. Chocolatier Marseille: L'Espérantine The origin of the Chocolaterie de Puyricard is not common. Although of Belgian origin, Marie-Anne and Jan-Guy Roelandts developed their experience with chocolate in Congo. Then, in the small village of Puyricard, near Aix-en-Provence, they decided to settle down to evolve in the world of chocolate. Maison Mistre is one of the latest addresses to have established itself in Marseille, in the Vauban district. After several weeks of work, Pauline and Laure Mistre, cousins in their own right, opened a new delicatessen and chocolate shop in Marseille in August 2021. Following in the footsteps of their respective fathers, the two cousins decided, almost in response to the call of destiny, to continue the family know-how and love of good things, straight from our region. Result, they now offer in their chocolate shop nearly a hundred varieties of chocolate, competing with other Provençal flavors such as candied fruits, spreads, and other sweets that you will love.
