It’s Laura TARIZZO, a Marseille chef and co-founder of Maison Loko, who is orchestrating this new gastronomic adventure. Trained at the Paul Bocuse Institute, she blends traditional craftsmanship with contemporary creativity: “Pâté-croûte is a traditional art that we are reinventing with a contemporary and relaxed spirit.”

A bold Provençal menu
The menu is designed as a culinary journey through the seasons and the Provençal terroir, featuring unique pairings: «Flavors of the Calanques»: a signature creation combining octopus, pastis, and fennel, «Provençal Tradition»: a daring reinterpretation of pieds paquets, «Summer Feathers»: a subtle harmony of duck, artichokes, and figs , «Winter Sun» and «Autumn Crunch» round out this tempting salty collection.

Maison Loko goes bold by creating two sweet pâté-croutes : « Snowy Peaks » with chestnuts and blackcurrants, and « Christmas in Provence », a true delightful tale with flavors of calissons and orange blossom.
