Due to the many requests from loyal customers, Fabien Pouchol and his team have decided to take on a new challenge: transforming choux pastry into a bistro version. After a successful test during the February holidays, the café officially launches its Bistrot-choux, a savory offering that is already making taste buds tingle. On the menu, three eclairs with distinct flavors: a meaty version featuring dried duck breast with a creamy butternut-chestnut-citrus filling, a fish option where sea bream meets chive cream cheese, and a vegetarian eclair blending soft potatoes and fragrant oyster mushrooms. Each dish is accompanied by a butternut puree or a salad for a balanced and always delicious lunch.
