A True Marseille Institution

Let's go back in time to 1939, when L'Épuisette began serving its first dishes. The restaurant welcomed business meals from the bustling maritime port at that time. It was the Bonnet family who later took over the establishment, and two generations later, they still run the show!

A local-maritime cuisine

The chef likes to describe his cuisine as local-maritime because at L'Épuisette, we "adapt to what the sea offers us". Every morning, L'Épuisette receives the catch of the day from Vallon, and then it's the turn of the chef and his team to showcase the products with talent! From the Rockfish Aspic with saffron from the hinterland to the Line-caught Sea Bass with broken olives, sea salad, and lovage juice, to the Rove brousse cheese "Gouiran" with roasted figs and oriental kadaïf, the balance of flavors and the right seasoning awaken the taste buds. It's a real Mediterranean seaworthy journey where diners are immersed in the heart of this sunny culture.

And when it comes to desserts, there's a touch of magic in the air thanks to pastry chef, Matthieu Lena. He delights in working with seasonal ingredients, creating unique combinations like Williams pear cushions, hibiscus sorbet, choco-apple Granny Smith, and a tarragon tube; or Victoria pineapple with roasted mango, passion fruit, and Sichuan pepper caramel. The pastry team also bakes all the bread served at L'Épuisette.

Delicious and responsible cuisine

Cooking responsibly, what does that mean exactly? Chef Guillaume Sourrieu has been dedicated to this principle for 24 years. He believes in using ingredients that are in season, and in moderate amounts. Recognizing the importance of preserving natural resources, chef Sourrieu works closely with fishermen to ensure that every ingredient used in L'Épuisette is carefully selected.
