Signature cocktails in three stages by a renowned mixologist
Rémy Durand, trained between Paris, Shanghai, Nice, and Cannes (notably at Lutetia, Carlton, and Negresco), won the France Rémy Martin competition before becoming a world finalist. Alongside Maxence and Roman, he offers a bold cocktail menu in three phases: the “« Démarreurs »” (like the Shizo or the Other Beast) to kick off the evening, unique creations designed to pair with dishes, and then dessert cocktails like the Globe-trotter with salty notes or the Dernière Séance with popcorn and galanga. Negroni lovers will also find joy with a dedicated menu blending classics and house creations (Espéranto, Chique chic Negroni, Garrigue).

Mediterranean Tapas and Solar Recipes with Touches from Afar
In the kitchen, Charbel draws inspiration from all over the Mediterranean – Greece, Italy, the Levant, Spain, and Armenia – to create a generous and vibrant menu. Pistachio basil burrata, grilled octopus fava chorizo, Armenian lahmajoun, caponata, bouillabaisse meatballs, and spinach feta borek: the tapas are imagined as bridges between cultures, crafted to enhance every sip. Soon, there will be sweet and cocktail pairings to extend the culinary journey all through the evening.
