After some competitions, tests, and flan adventures across France, Benjamin Martinetto, the founder of La Flanterie, dives into a sweet new whim: turning flan into beer. The result: a Pastry Sour that's as unusual as it is surprising, brewed hands-on with DWYN Brewing. The idea wasn’t to “drink a flan,” but to capture its roundness, sweetness, and vanilla aroma in a true craft beer. A tangy attack, a creamy roundness, a hint of vanilla, and tonka bean: a tasting trip that’s both nostalgic and bold.

XXL Flans and Flan Beer: the perfect duo at Vivants
The official launch will take place on Saturday, November 22, from 2 PM to 5 PM at Vivants (26 rue Neuve, Lyon 2e), the headquarters for Lyon's bon vivants.
This natural beer and wine bar is the perfect spot for this one-of-a-kind tasting. On the menu: flan beer served on tap, competition flans, and a local, festive, and slightly rock 'n' roll atmosphere. And to accompany the brew, pastry chef Mathieu from Boulangerie Marcel (Lyon 6e) will bring his A-game with four signature flans — Vanilla, Pecan, Coconut, and Hazelnut — with ultra-melting textures and generous portions (a quarter of a flan, just so you know).
A Lyon experience of fun, flan, and fermentation
This unique creation, the result of a year of hard work between La Flanterie, DWYN Brewing, and Vivants, perfectly embodies the spirit of Lyon's food scene: creative, bold, and carefree. Here, we don’t take flan lightly: we reinvent it, we brew it, and we share it. So if you want to raise a glass to indulgence and discover the unlikely marriage of malt and pastry cream, head over to Vivants on November 22.
