The World's Best Praline Tart Has Just Been Crowned in Lyon

For this fourth edition, candidates gathered at the Vatel Academy in Marcy-l'Étoile to showcase their vision of this beloved Lyonnais specialty. Under the watchful eye of a jury chaired by chef Joseph Viola, they had to impress with three essential creations: the praline tart, the praline brioche, and a revisited classic.

In the prestigious tart category, it's Jospy Collado who ultimately wins the Golden Praline award. The independent pastry chef gets his revenge after the 2025 edition, where he came in second. Victor-Hugo Da Silva Santana, from Gorrel Prestige Pâtisserie in Sainte-Foy-lès-Lyon, takes silver with a creation blending almond shortbread, homemade pink praline, and decorations inspired by Lyon.

Lyonnaise Brioche Gets a New Champion

At Hennemann Pâtisserie, victory tastes doubly sweet: Mayline Gastinois wins the Golden Praline award for brioche, along with the special Apprentice prize. A wonderful recognition for the young pastry chef, who triumphs over particularly fierce competition. The Silver Praline goes to Manon Hertzog from Mosaïque Pâtisserie for her Rosaline, a creation that plays with textures and praline in equal measure. Brioche, pastry cream, pink pralines, and a flaky pastry version make up this particularly indulgent interpretation.

The Canuts cake takes gold

In the revisited classic category, Clément Delomier from the chocolatier Ondes de Choc in Craponne won over the jury with his Canuts Cake. His idea? To bring together praline and basque cake to create a distinctly Lyonnais version. Second prize goes to Luis Gustavo Nascimento Brant from Au Fidèle Berger in Annecy for his Ruby Heart. The jury also awarded its special prize to Loïc Bensoussan from Maison Bonbec in Montreal for his brioche.

A new prize for more inclusive praline

This 2026 edition also saw the launch of the Nutrisens Prize, dedicated to heads of medico-social establishments. The challenge was to imagine a creation with pink praline and a texture adapted to the dietary needs of residents. Sylvie Gehant fromCMPR Bretegnier in Haute-Saône takes home this first Golden Praline.

And the celebration isn't over yet: the amateur competition of the Praline World Championship will take place Saturday, September 26 in the afternoon, on Place Maréchal-Lyautey, in the 6th district of Lyon. The perfect opportunity to see if the future praline champions are already hiding among Lyonnais residents.
