After delighting taste buds at Les Mauvaises Herbes for several years, Chef Emily Dader is spreading her wings and making a grand entrance. In September 2025, she will open Trèfle, a completely plant-based gastronomic destination right in the heart of Lyon. Located at 25 rue Franklin in the very chic Ainay neighborhood (Lyon 2nd), this restaurant aims to bring plant-based cuisine to the forefront, boldly and uncompromisingly. And let’s just say, it’s bound to be the talk of the plates!

A gastronomic table that’s 100% plant-based
At Trèfle, there are no disguised cheeses or fake deli meats, but rather sharp, signature cuisine that confidently blends refinement and boldness. Emily Dader sets the tone: here, we celebrate plant-based food in all its forms, taking inspiration from omnivorous markers to create complex, subtle, and impactful dishes. At lunchtime, there’s a three-course menu for €34. In the evening, enjoy a culinary waltz with seven courses for €68.

Living wines from small plots
Trained in Michelin-starred restaurants in France and abroad, the chef's talents extend beyond the plate. The wine list is a bold statement, featuring only "living wines" from small plots cultivated either organically or biodynamically, often crafted by passionate female winemakers. Here, the wine has body, meaning, and a delightful personality.
