Lyonnais recipes are not universally loved
The menu at Bouchon du Grove, although simple, is devilishly effective. It draws inspiration from the teachings of the French culinary legend, Monsieur Paul Bocuse. On the menu: French classics such as chicken fricassee, beef bourguignon, and tarte tatin, as well as the "lotus tomato," a unique creation that presents an open tomato like a lotus flower, covered with goat cheese and Parma ham.

If the most typical dishes of Lyon's bouchons are rare, it is mainly a question of culture. Christian Ville had to make some adjustments to adapt to American palates. Thus, andouillette, sweetbread, or blood sausage did not meet the expected success. As the chef says, "The American eats to live, while the French live to eat."
