For five days, the second-year students of the LYFE Institute, formerly known as Paul Bocuse Institute, take over a real pop-up restaurant. Located at 3 bis avenue Guy de Collonges in Écully, this unique dining experience opens from March 2 to 6 and promises to take us on a journey inspired by the legendary Orient-Express, blending elegance, refinement, and the spirit of travel. It’s an immersive experience designed as a gastronomic adventure, imagined from A to Z by those who will shape the French culinary scene of tomorrow.
“The Journey”: a menu like a trip across Europe
On board, there's a single five-course menu called “The Journey”, offered at €29 (or €15 for a three-course lunch), crafted as a gourmet odyssey. Each dish represents an iconic stop, from Paris to Istanbul, showcasing creativity that’s already very mature. The journey begins at the "Gar."
and from the East" with a polenta stick and Parisian mushrooms in the style of a tartlet, before crossing the "Parisian countryside" around an elegant velouté of Barry accompanied by scented oil and naturally leavened rye bread.

Next stop is "Vienna", where the trout reimagined in Tafelspitz style with crispy root vegetables, horseradish condiment, and sour cream creates a highlight. Meanwhile, "Constantinople" excites the taste buds with flamed baklava made with raki and orange blossom. The journey concludes at the "Terminus of the Train Station".rkeci" on a sweet and floral note, blending rose marshmallow and quince paste. A coherent, bold, and truly impressive culinary score for students.
A 100% student project, from the kitchen to the dining room
This pop-up restaurant is entirely conceived, managed, and operated by the students themselves. Cooking, serving, staging, communication, customer reception: everything is in their hands. For a few days, they take on the role of true professionals, with the same demands, the same pressure, and the same attention to detail. It's a real-life immersion into the reality of the profession, turning this educational project into a genuine gastronomic laboratory.
For customers, it’s also a rare opportunity to discover tomorrow’s talents before anyone else, in a privileged and meticulously polished setting.
