A Delicious Success Story in Search of a Comeback
Founded in 1977 by Sébastien Bouillet's father in Croix-Rousse, this pastry and chocolate shop has become a must-visit spot for sweet tooths in Lyon and beyond. Taken over by Sébastien in 2000, it has established itself as one of the best pastry shops in Lyon, thanks to its creations that are as beautiful as they are delicious, now boasting 14 shops in total.

But behind this apparent success, the heavy investments made at the end of 2022 are starting to weigh heavily. The reason? A gigantic chocolate laboratory, located in Miribel, covering 800 m², which complements the already reserved 1,200 m² for pastries. It's an ambitious project, but it seems quite challenging to make it profitable today.
A procedure for a fresh start
In the face of these challenges, the safeguard procedure stands out as a lifeline. This approach allows the company to protect its activities, temporarily freeze its debts, and think about a recovery plan. For Sébastien Bouillet, it's an opportunity to regain solid ground and ensure the continuity of the expertise that has delighted Lyon residents for over four decades.
