Iconic establishments that earn their reverence
After an intense five-month tender process, the 54 concessions of Halles Paul Bocuse have been closely examined. Result: 46 establishments have had their contracts renewed, while 5 iconic shops will be passing the torch. Among them are the Italian caterer Tacca via Rolle, the cheese shop Bellevaire, the fruit and vegetable shop Cerise et Potiron, the wine merchant Nicolas, and the must-visit bar Fer à Cheval at the entrance of the hall. Though we'll miss these departures, there's an exciting opportunity for new players to step in and invigorate the culinary offerings at Halles Bocuse, ranked among the best food markets in the world by the Financial Times.

New Arrivals That Make Your Mouth Water
Among the highly anticipated arrivals for 2026, we have the well-known Italian caterer Lello, famous for its pasta flambéed in a wheel of parmesan and its tiramisu, ranked 3rd best in the world; the cheese maker Janier, a Meilleur Ouvrier de France and supplier to the finest Lyon establishments, who will be opening his first public store; the wine merchant Chardonnay & Cie taking over from Nicolas with a refined selection of wines and spirits; the bar Le Fer à Cheval 2, led by partners of chef Grégory Cuilleron, who will continue the legacy of his iconic elder with an inventive menu featuring a snail croque-monsieur; finally, the space of Cerise et Potiron will become a local producer store, Terres Lyonnaises, offering a 100% short circuit selection.

Three locations are still available: At Mr. Paul Van Cappel, Cerise et Création, and the fine grocery store Petrossian, which have not renewed their applications. A new call for bids will be launched on January 20. These changes aim to reaffirm the identity of the Halles Bocuse by blending tradition and innovation, while maintaining a balance among the various artisanal activities. One thing is for sure: the Halles will continue to spark curiosity (and appetite) among food lovers in Lyon and beyond.
