Jacky Gallmann, the Alsatian, has worked in the kitchens of Lameloise before ruling over the brasserie Georges. Frédéric Lafay, the Burgundian, a former lawyer turned passionate sommelier, will share his wine expertise with his customers. Together, they aim to offer heartfelt cuisine, the kind that Jacky's mother, Marguerite, passed down to him. Alsatian cuisine that is generous and true to its roots, featuring XXL sauerkraut, coarse salt beef, baeckeoffe, and freshwater fish. From queen's bites to foie gras, all complemented by delightful treats crafted by Philippe Urraca, MOF, and cheeses expertly aged by Christian Janier. Expect to spend between 50 and 60 euros on average—a chic yet accessible experience, popular in the noble sense of the word.
