We've known since ancient times: the city of Lyon is the stronghold of French and international gastronomy. But distinctions are always pleasing, especially when they are awarded by one of the most read travel magazines in the world. The very popular Condé Nast Traveller has mentioned Lyon among the most coveted gastronomic destinations in Europe. According to the publication, the capital of the Gauls is the best city to taste the classics of French cuisine. Lyon, birthplace of the new cuisine "Lyon is the first gastronomic city. This is where the new cuisine was born, where great French chefs such as Paul Bocuse became famous for their gourmet restaurants, and where a new avant-garde of young chefs now honors a centuries-old tradition. Food enthusiasts first go to bouchons, rustic restaurants that serve local dishes rather than luxury plates. There are only about twenty authentic bouchons, including the pThe most beautiful ones can be found on Saint-Jean street. Take a table in one of them and order a coq au vin and a gratin cardoon (from the sunflower family, it looks a bit like an artichoke cooked with cream and cheese). Then you must visit the city's markets. Each stall is filled with gloriously twisted fruits and vegetables, ugly but delicious sausages, and very fresh fish. Try Saint-Antoine for a traditional French market day and Les Halles for a smarter indoor dining area."
