Dardilly is welcoming a table that could soon become a must-try. Open since January 7 at 6 Place Général-Brosset, Jade immediately establishes itself as one of the exciting new fine dining restaurants to watch closely in the western part of Lyon. Behind the stove, Chef Summer Wong, originally from Hong Kong, already boasts a remarkable journey that piques the curiosity of food lovers.
French Champion of pâté-croûte… without having tasted it
The chef's story reads like a high-end culinary film script. In 2021, while working in his first restaurant in Hong Kong, Summer Wong crosses paths with six clients who will become his mentors and sponsors. Convinced by his talent and determination, they offer him the chance to train in France. Off to Lyon, where he spends three years at the Lyfe Institute, formerly known as the Paul Bocuse Institute, to refine his skills and perspective on French gastronomy.

And here comes the detail that makes the journey even more delightful... Arriving in France in 2022 without ever having tasted a puff pastry, Summer Wong still manages to snag a third place in the French championship in 2023, before becoming the CFA French puff pastry champion in 2024. This achievement perfectly sums up her style: bold, precise, and incredibly effective.

An expressive French cuisine with Asian influences
At Jade, the plate builds a culinary bridge between two cultures. The chef offers bold French cuisine, enhanced by subtle and elegant Asian touches. The restaurant revolves around a tasting menu that highlights seasonal products, paired mainly with wine choices from France. An experience designed like a journey, without ever losing the thread of gastronomic excellence.

Nothing has been left to chance, not even the name of the restaurant. Jade is made up of the initials of the six people who helped Summer Wong change her life and start her French adventure. A subtle yet powerful tribute, much like this promising venue that could soon shine a spotlight on Dardilly in the Lyon culinary scene.
