After winning the Silver Praline award in 2025, Jospi Collado claimed gold in 2026 with his take on the famous Lyonnais specialty. At just 25 years old, the Spanish pastry chef already boasts an impressive résumé: trained under chef Martín Berasategui, then working in Ireland, he came to Lyon to learn alongside Nicolas Pépin. Quite a turn for someone who admitted he wasn't particularly fond of pralines before discovering the secrets of this local delight!

His recipe relies on roasted Valencia almonds prepared in-house and a particularly refined finish, with a lion drawn through a stencil on the surface. The result: a creation that reimagines the classic pink praline tart, a staple in Lyonnais shop windows, with a personal touch that set him apart in the competition.
