Located in the Halles de Lyon Paul Bocuse since 1947, this iconic spot of Lyonnaise gastronomy officially announced on Thursday, July 2, that it has filed for a safeguarding procedure with the Commercial Court of Lyon. The clear objective is to protect the business while allowing it to continue welcoming customers and operating normally.
This decision comes just two years after a significant first challenge. In 2023, the fish market was placed in judicial liquidation before being revived by a new management team. This rebirth had rekindled hope among seafood lovers and regulars of the Halles.

Investments Greater Than Expected
The recent history of Maison Pupier has seen several changes in ownership. It was first taken over in 2024 by Jean-Luc Vianey, Meilleur Ouvrier de France 2011, and then, in February 2026, it came under the leadership of Thomas Vedrine, head of the restaurant Baba La Grenouille, also located in the Halles, along with a group of investors.
However, in the very first weeks of operation, the new management identified significant needs for investment and upgrades to ensure the longevity of the establishment. Faced with this situation, the leaders chose to opt for a safeguarding procedure, an arrangement designed to...preventive measure that allows for the organization of financial commitments while keeping the activity going.

A strong commitment to preserving this historic address
Despite this announcement, the leaders remain optimistic. Thomas Vedrine expresses confidence in the future of Maison Pupier and wants to continue developing this Lyonnaise institution. The company also hopes to count on the support of the City of Lyon, whose teams have shown their attachment to maintaining this essential address in the Halles.
A reassuring point for regulars: this procedure only concerns Maison Pupier. The restaurant Baba La Grenouille, also managed by Thomas Vedrine, is not affected at all and continues its activities as usual.After having already overcome a judicial liquidation in 2023, Maison Pupier is once again trying to secure its future. It's a delicate step, but it could allow this nearly eighty-year-old institution to continue celebrating Lyon's gastronomic heritage for many more years to come. Just a reminder, the famous Bouillet house was also placed under a safeguard procedure at the beginning of 2025 to better bounce back.
