An ambitious project for the future stars of cuisine

The Lyfe Institute, a temple of culinary excellence, is strengthening its long-standing partnership with triple Michelin-starred chef Yannick Alléno for an exciting project. At the end of 2025, the chef and the training institute for tomorrow's cooks will open Pavyllon, a school-restaurant in place of the current training restaurant L’Institut, within the Hotel Le Royal. Every year, more than 300 students from around the globe will have the opportunity to refine their culinary and service techniques there. The program includes modern cooking, fermentation, sugar-free innovation, the art of sauces, management… All under the watchful eyes of an audience that will get to experience the new generation of star chefs.

A Cuisine Rooted in Lyon's Terroir

Even though the menu and prices of Pavyllon are still a mystery, Chef Alléno is already hinting at a “cuisine with a strong local connection.” In simple terms, get ready for dishes that beautifully highlight regional ingredients, crafted in the innovative style of this visionary chef. The restaurant will accommodate 70 guests and, after a gentle launch five days a week, aims to serve its delights seven days a week.

Is a new Michelin-starred restaurant coming to Lyon soon?

Before enjoying this "gift for the people of Lyon," as described by Dominique Giraudier, director of the Institut Lyfe, the current Institut will close its doors in June 2025 for a radical transformation lasting five to six months. The goal for this school-restaurant is clear: to earn a Michelin star. Lyon, the city of food lovers, is getting ready to welcome a culinary gem where learning, innovation, and expertise will come together under the guidance of one of the most celebrated chefs in the world (who boasts 16 stars across 17 restaurants).
