Among a fierce competition involving 20 dedicated artisans of puff pastry, it's the Canuts bakery and its baker Julien Croizier who shone brightly. Gathered on Thursday, January 4 in Saint-Priest, the jury composed of fine palates spent 2 hours tasting each creation, scrutinizing the puff pastry, the baking, the frangipane, and of course, the taste.

If beauty was present in every galette, it was the taste that propelled Julien Croizier to the top. The perfect marriage between the creamy frangipane and the divine crispiness of the puff pastry made all the difference. Julien Croizier humbly confides to BFM Lyon: "We took our classic and daily recipe, we focused more on the visual aspect because it's a competition."

An outstanding baker with a sparkling track record

This is not the first time Julien Croizier has reached the top of Lyon's bakery scene. Already crowned in 2019 for the best butter croissant in the Rhône, he has also won the title of best baguette twice in 2018 and 2023. A consistency in excellence that makes Boulangerie des Canuts a gourmet institution in Lyon.
