In an effort to challenge stereotypes and promote change, TheFork is launching its Green Weeks and revealingits selection of the top 100 eco-friendly restaurants in France. The selection is based on ratings and reviews from diners who have already tried them, but also on being verified and approved by the FiG label (Food Index for Good), whose mission is to promote eco-friendly restaurants. The evaluation criteria developed take into account the emphasis on plant-based dishes, the use of seasonal, local, and organic ingredients, waste management, surplus food, and the priority of renewable energies.
