Delicatessen's Cheddar and Bacon Mac & Cheese Recipe

Ingredients (for 4 people):

  • 500g pasta
  • 250g aged cheddar cheese (6 months)
  • 50cl liquid cream
  • Salt
  • Pepper
  • Spring onion


Preparation:

  1. Cook the macaroni pasta (al dente)
  2. Cut a good quality cheddar cheese into small cubes, then use a cutter to turn them into granules (easier to melt)
  3. In a saucepan, heat the salted and peppered cream
  4. Add the cheddar cheese and melt while stirring, then add the pasta
  5. Let it reduce slightly so that the pasta is well coated
  6. Sprinkle a little extra cheddar cheese at the end of cooking (for a stronger flavor)
  7. Mix and serve with finely chopped spring onion

  • Preheat your oven to 180°C
  • On a baking tray, place 4.
    • Place bacon slices on parchment paper
    • Bake for about 10-15 minutes
    • Chop slices and sprinkle over pasta
