Schoup's, a new restaurant in Lyon located on rue de l'Arbre-Sec, takes on the crazy challenge of bringing together Alsatian and Algerian cuisine without falling into gimmicky fusion. Here, we’re talking more about encounters, winks, and dishes that respond to each other, with a real coherence on the plate.

A personal story before it becomes culinary

This clash of cultures finds its roots in the backgrounds of Adèle and Ashène, partners in life as well as in the kitchen. It’s not about mixing for the sake of mixing: each dish tells a story, a memory, a heritage. Sardines with harissa, a gratin of spätzles with spinach drizzled with an ultra-silky munster emulsion… The journey is unexpected, but never forced.

At Schoup's, cream is a serious business, almost a signature. From the velvety carrot purée topped with a thick layer of tangy cream to the indulgent praline pie, everything is precise and delicious. It’s no wonder, given that Ashène spent eight years in pastry with Georges Blanc after growing up with matlouh, the Algerian bread made by his mother.

When Algerian couscous meets Alsatian baeckeoffe

The menu fully embraces this dialogue between two culinary masterpieces. On one side, there’s a shredded lamb couscous with melt-in-your-mouth vegetables, with fluffy semolina served on the side. On the other, an interpretation of baeckeoffe featuring pork cheek slow-cooked for 20 hours in riesling, along with onions, potatoes, and crispy bacon chips. All of this is presented without trying to resemble anything else.
