And what if we enjoyed a piece of Alsace for dinner? The flammekueche, more commonly known as "tarte flambée", is an integral part of Alsatian culinary heritage. Traditionally made of a crispy bread dough covered with a mixture of fromage blanc and crème fraîche, seasoned with a blend of spices and topped with finely chopped bacon and onions, it is baked in a wood-fired oven, directly on the stone. That's the introduction.

If we're making you drool today, it's because a flammekueche bar has set up shop in the heart of Lyon at 12 rue Tupin in the 2nd arrondissement: Flam's. In this spot, you'll find traditional flammekueches jazzed up with garlic and chives, fresh mushrooms, or even gratin-style. But there are also much more original creations like the Vegetarian (zucchini, tomatoes, and mushrooms), Saint-Marcellin, Primeur (goat cheese, tomatoes, pesto, and chives), Goat Honey, Munster, Burger (with ground meat), Mexican, Chicken, Montagnarde (with raclette cheese), or Nordic (with smoked salmon and dill).
