A Northern cuisine reimagined with elegance
True to the spirit of l'Hermitage, Gantois celebrates seasonal products, short supply chains, and the generosity of local tables. Here, you’ll rediscover regional classics: reimagined carbonnade, chicken with a twist of maroilles, all in more refined versions that still keep it casual.
The idea? An authentic, contemporary, and warm cuisine, designed as a playground for chefs and their team, in a setting that evolves with the seasons.

An Artistic Touch by Lisa Merien
To celebrate this rebirth, the restaurant has chosen to unite its walls with the world of a young 29-year-old artist from Lille: Lisa Merien. Her 24 canvases now adorn the dining area, infusing the walls of the former 15th-century hospice with vibrant energy.
In her paintings, women take center stage: powerful, free, and diverse. The warm shades - orange, ochre, intense red - engage in a dance with the light of the space. “I seek to celebrate the beauty of women, their strength, their softness, their raw truth,” Lisa shares, whose work blends figurative and abstraction, instinct and emotion.

Between Heritage and Modernity
This unexpected duo of ancient institution and emerging artist perfectly embodies the spirit of the Hermitage Gantois: a house rich in history that isn’t afraid to evolve. A place where heritage meets creation, and where you can indulge as much with your eyes as with your palate.
