Ingredients (for about 40 waffles):
For the waffle:
- 1kg of flour,
- 1 pinch of salt,
- 150g of sugar,
- 8 eggs,
- 50g of baker's yeast,
- milk,
- 500g of butter.
For the filling:
- 1kg of sugar,
- 500g of butter,
- 1 Madagascar vanilla bean.
Preparation:
For the waffle batter: in a mixing bowl, combine the flour, salt, sugar, eggs, and yeast dissolved in a little milk. Mix well and add the diced butter.
Knead the dough until elastic. Form a ball and let it rest in a warm place for 3 hours.
Shape the dough into cigars. Let them rise for 1 hour. This shape will resemble oval waffles.
While the dough is rising, prepare the filling. Make a sugar syrup at 31°C by boiling the sugar in 50cl of water. Stop cooking as soon as it starts boiling (or when the syrup reaches 121°F).

Cook the waffles in the hot waffle iron. As they come out of the mold, open each waffle in half and quickly stuff it.
