The gratin chicon! A Proustian madeleine for some Lille residents... a real nightmare for others! In any case, this traditional recipe from the North surely brings back memories of your childhood. Today, we offer you the chance to rediscover it with chef Philippe Etchebest in a video!

Here is the list of ingredients for 4 people:

  • 1 lemon
  • 4 endives
  • 1 tbsp of rapeseed oil
  • 30g of butter
  • 1 tbsp of powdered sugar
  • Salt
  • Pepper
  • 4 slices of ham
  • 100g of grated gruyère cheese
For the béchamel sauce:
  • 20g of butter
  • 20g of flour
  • 30cl of milk
  • 4 pinches of salt
