Ingredients:
300g puff pastry
400g Maroilles cheese
5 eggs
10 to 20cl dark beer
4 tablespoons sour cream
1 nutmeg
Preparation:
Roll out the puff pastry and place it in a suitable dish.
Scrape the rind off the Maroilles cheese and cut it into thick slices. Place them on the pastry.
Beat the eggs into an omelette with the cream, salt, pepper, and grated nutmeg. Add the dark beer while continuing to beat. Pour this mixture over the Maroilles cheese.
Bake the flamiche at 200°C for 30 to 35 minutes.
Serve hot with a lamb's lettuce salad.
Ps: For a fuller flamiche... you can add finely chopped leeks sautéed beforehand in a pan!
