Ingredients:
- 375g flour
- 21g fresh yeast
- 135g milk
- 2 eggs
- 25g brown sugar
- 5g salt
- 200g softened butter
- 150g pearl sugar
Preparation:
In a bowl (or in the bowl of a mixer), mix the flour, salt, and brown sugar.
Dissolve the yeast in warm milk and add to the mixture.
Add the eggs and mix for 5 minutes at low speed.
Gradually incorporate the softened butter and knead the dough for 10 minutes.
Let it rest for 1 hour and 30 minutes at room temperature until the dough doubles in size.
Then add the pearl sugar.
Prepare pieces of dough weighing 80 to 140g and let them rest for 30 minutes. Bake for 3 minutes to achieve a nice caramelization.
