Strawberry gazpacho with burrata and fresh mint: the surprising recipe from Dona Bica

Since March 14, Dona Bica, the first Pasteis de Nata factory in Lille is in lockdown. To make us travel while staying at home, she offers us the recipe for her Strawberry Gazpacho.

For the Strawberry Gazpacho you will need:

300g small elongated tomatoes

45g peeled and seeded cucumber

20g seeded red bell pepper

30g red onion

15g crustless bread crumbs

200g strawberries without stems

13.5ml wine vinegar

30ml tomato juice

20ml olive oil

2 large ice cubes

Small mint leaves

Sea salt

Freshly ground black pepper

 

For the finishing touch, you will need:

1 burrata

Whole country bread, fried and crushed

Small mint leaves

Olive oil

Sea salt

Freshly ground black pepper

Cut the tomatoes into pieces and slice the cucumber, red pepper, and red onion. Place them in a large bowl and add the bread, vinegar, tomato juice, and strawberries. Season with freshly ground black pepper, sea salt, and olive oil. Add a few small mint leaves, ice cubes, and mix well. If you want to intensify the flavors, let it marinate for up to 6 hours (in this case, do not add ice right away).

In a blender, mix all the ingredients well. Break the burrata into small pieces and season with salt, pepper, and olive oil. Serve the gazpacho with small pieces of burrata and fried and crushed country bread. Finish with a drizzle of olive oil, salt, pepper, and a few small mint leaves. Serve immediately.
