Ingredients (for 4 people):
- 4 eggs
- 15 cl of Northern beer (amber beer)
- 10 cl of liquid cream
- 160 g of Maroilles cheese
- 1 shallot
- 1 onion
- Herbs from the garden (spring onions, coriander, flat parsley, thyme or small wild asparagus...)
- Butter
- 4 slices of smoked duck breast (or smoked bacon)
- Salt and pepper
- Bread to make soldiers
What happens next?
Slice the onion and shallot. Scrape the rinds off the Maroilles cheese and cut into slices, then into cubes.
Trim the fat and cut 4 slices of smoked duck breast into cubes.
Melt a large piece of butter in a large skillet, then add the sliced onion and shallot to the foamy butter. Add the diced duck breast, 3/4 of the Maroilles cubes (120 g of Maroilles) and the garden herbs to the skillet.
Let the cheese melt, then deglaze the pan with the remaining beer and cream. Enjoy this delicious dish with some crusty bread!
Mix the flour with the beer from the North. Then add the liquid cream. Let it boil until the Maroilles is completely melted. Add some pepper and salt. In 4 ovenproof ramekins, break an egg and pour a good ladle of the mixture above. Place remaining Maroilles dice on top. Bake at 180 degrees for 7 minutes and enjoy with some toast! Source
