A meticulously crafted scene from the moment you arrive

Right from the entrance, the atmosphere is set. The silence, the suspended sketches, and the airy haikus create the foundation of a truly unique sensory universe. The dimly lit corridor, soft underfoot, leads us to a bright room with a minimalist aesthetic. In front of us: an open kitchen, calm and serene, where the team works in an almost meditative atmosphere.

A menu that reads like a poem

At Arborescence, every dish has a mysterious name: “Epiphany of Roots,” “Lobster Carapace,” “Oryzae”... The tasting menu enjoyed that day (named Thought) starts with a frosted sorrel leaf and ends with another variation of sorrel, like a poetic loop. In between, we travel through grassy forests, ocean depths, and nearly dreamlike scenes drawn with edible ink on the plate.

A crush on the lobster, the golden waterfall, and the ‘Little Tree’ dessert

It's tough to pick a favorite, but if we had to highlight three dishes from the amazing creations: the Golden Cascade, a delightful mix of veggies, flowers, and an ultra-sensory experience; the Lobster Shell, with a twist of blood orange and tarragon; and the Little Tree, a beautifully structured dessert that looks like an edible plant sculpture, taking us on this almost surreal journey. A special mention goes to the dessert “Oryzae,” all about rice in every possible form: crispy, fluffy, frozen, pickled… a perfectly balanced, tangy sweetness.

A duo of chefs in perfect harmony

Behind this exceptional address, there’s a duo: Félix and Nidta Robert, in the kitchen and in the dining room, in creativity and precision. Félix carves out a free and profound cuisine, inspired by his journey at Gauthier and alongside the Troisgros. Nidta, on the other hand, creates a sharp wine menu, guided by her Thai roots and a rare sensitivity to nature. Their connection is felt in every little detail, even in the meal’s booklet, illustrated by the chef herself.

A cuisine that tells a story

At Arborescence, everything is homemade, thoughtfully prepared, sourced locally, and made with true care. The fish is caught line by line, the vegetables come from nearby farms, and the spices are chosen with love. Nothing is left to chance, yet nothing feels pretentious either. It's smooth, obvious, and almost soothing.

You leave with the rare feeling of having experienced something unique — a subtle balance between fine dining, a sensory experience, and an extremely warm welcome.
