After sharpening their skills in prestigious, award-winning establishments like Pierre Gagnaire and Le Clarance, Valentina Giacobbe and Julien Ingaud-Jaubert have settled in Lille to open their first restaurant. Ginko, a symbol of resilience and longevity, beautifully embodies the ambitions of this passionate duo: a conscious cuisine deeply rooted in its time.

Between plant-based and harmony, a perfect balance
On the menu at Ginko, there are two options: Harmony and Plant-based. And let me tell you right away, we sampled everything! From the very first dishes, you can feel the incredible care put into every detail. The seasonal products, chosen with rare precision from local producers, are enhanced by elegant and simple presentations, where technique takes a backseat to emotion. From daikon and radishes paired with a citrus marmalade to seaweed gnocchetti, and a split pea stew elevated by hints of candied lemon and saffron, each bite is a delight. A special mention goes to the cod, perfectly pearly, served with a nearly perfect seaweed beurre blanc.
And what about the desserts? Julien has a gift for finishing the meal beautifully. The combination of pear, chestnut, and milk foam was simply spectacular, both light and indulgent. No need to go on and on to tell you that we thoroughly enjoyed it!
A peaceful and elegant atmosphere
At Ginko, everything is done to make you feel comfortable. The atmosphere is soft and calming, almost like time stands still as soon as you step through the door. It's a far cry from stuffy restaurants: here, they pamper you without going overboard. The service is warm and attentive, and you can feel that every detail is thoughtfully crafted for your comfort. It’s cozy and elegant, never pretentious. One thing’s for sure: we’ll be back.
