What a joy to discover, last December 26th, a new Burgundian restaurant popping up in Dijon! In addition to always being able to find it at its corner at Côté Colombo in Les Halles de Dijon, you can now enjoy the delicious dishes of chef Colombo at the Cité de la Gastronomie. What a great way to love our beautiful region! From food on the go to Colombo-style dishes! The well-known Dijon chef, Florent Colombo, pays tribute to his signature dish, the eggs in meurette, with his new establishment, Meurette & Persillé! The chef and his team share their love for Burgundy by reinventing Burgundian dishes to enjoy on the go or cooked in Colombo's style, all made with passion and local products!

A 100% Burgundian menu

After being the head chef in several Michelin-starred restaurants in the region and starting his own catering business, Colombo now welcomes us to his charming new restaurant to delight us once again with his culinary talents. On the menu, Burgundian sharing platters, coq au vin, farm-raised chicken Gaston Gérard style served in a flaky pastry brioche, and his famous œufs en meurette alongside wines from our local winemakers! You won't find desserts on the menu, as the chef has decided to embrace the spirit of the food court at the Cité de la Gastronomie, providing the opportunity to taste the different establishments in the gastronomic village!

Here is the perfect food journey of the village with:

  • Start with the oeufs meurette, the chef Florent Colombo's star dish
  • For a quick Burgundian dish, the brioche sandwich with grilled pork tenderloin served with fries
