Maison Pavlov: the new luxury hotel and hidden gourmet restaurant of Le Bouscat

You certainly know their older sibling, le Chien de Pavlov, this Bordeaux neo-bistro recognized by media around the world, which has become a must-visit on rue de la Devise. Mary Henchley and Maxime Rosselin, married in real life, have expanded their scope to include hospitality after conquering the restaurant scene. This led them to invest in a typical 17th-century charterhouse (whose facade is classified) to create the first luxury hotel in Le Bouscat.

This haven of well-being and good living simplifies luxury and reinterprets its codes. The 5-star awarded establishment promises a warm welcome and an intimate atmosphere where you feel at home. The decoration is ethnic, chosen with instinct, with a daring harmony of fabrics and materials. The furniture, on the other hand, has been entirely custom designed. The hotel features 8 spacious rooms and suites, some with private terraces or overlooking the lush garden and its heated pool (from May to October). Each room has its own identity, characteristics, and unique decoration.

A new gastronomic address

Maison Pavlov takes great pride in gastronomy. Continuing Pavlov's legacy, we find the indulgence of its older brother combined with a more upscale service. The gastronomic restaurant, led by Basque chef Kevin Alsuguren, sublime garden products in accordance with the seasons. For a fun fact, the chef shops at local farms to offer an elegant and gourmet French cuisine made with Bordeaux terroir.

Among some examples of exquisite dishes that punctuate the menu, we have the "mackerel, flamed, accompanied by small lacquered potatoes and smoked paprika", "Brannens pigeon, wild mushrooms, smoked polenta and Albufera sauce", or "sweetbread, langoustine, red ginger and oxalis". The menu is intentionally small to ensure a high quality dining experience.

Unmatched (almost) incomparable. In the evening, a 4 or 6-course menu is offered by the chef to showcase his art, taking his time. Starting at the end of February, a high-end brunch will be launched every Sunday from 12:15 to 14:30 at a rate of €54/person.Maison Pavlov

The bold bet of eco-luxury

Another signature of the establishment? The hotel is part of a greener approach, with a permaculture garden watered by the existing well. The rehabilitation of the place was done using ecological paints and furniture made of natural or recycled materials. The eco-responsible approach continues through the implementation of composting, selective sorting, recycling of soaps with the UniSoap association, and also of cigarette butts with the Bordeaux-based EcoMegot association.

A green touch that complements an already sublime picture. Since December, a spa (with sauna and hammam) welcomes the hotel's clients. And practitioners intervene in the rooms p.
