When she talks about her restaurant, the award-winning chef does so with a delightful simplicity and humility. "A small restaurant in a small town". Yet, her small plant-based gastronomy restaurant is now making headlines in all media outlets. From the New York Times, to Le Monde or Le Figaro, minds are buzzing. Small in size indeed, with no more than 50 seats in the dining room. In the small town of Arès located on the Bassin d'Arcachon, the restaurant stands out.

A truly committed cuisine: focus on the bay!
In this paradise of crustaceans, the time is more for seaweed tartare with lemon caviar sesame, Parmentier hash with green juice and seasonal vegetables or even Paimpol coconut with calamansi and Batak berry. Names that speak for themselves and promise a refined, subtle cuisine of the future, with a range of flavors, textures and colors unmatched. Not to mention the best-seller for parties? The vegetable foie gras made with cocoa butter, chestnuts, mushrooms, cashews and shallots.
On the menu? 7 unique dishes that change monthly and 2 menus. The single market menu composed of 3 dishes for €24 and the gastronomic menu with 7 dishes for €59. A star may have fallen from the sky for her who did not expect as much, but who shines with her ultra-creative and solicious cooking.
