This is it! While we used to have to settle for enjoying their delicacies to go, now it's possible to sit back and get lost in their enchanted world. The new restaurant Palatino has opened today. This Monday, June 21, the first day of summer, will be filled with deliciousness. The most prestigious Italian food squadra has unpacked their suitcases full of San Marzano tomato sauce in this spectacular place of 850 square meters with ancient stone vaults and a balcony reminiscent of an Italian theater.

An authentic Roman osteria

As usual, the team went all out. Stepping into Palatino is like being transported in a fraction of a second to an authentic Roman osteria where fabric chandeliers dance among old black and white photographs, those of Italian families, choir children, and other artists from the 50s. At the back of the establishment, a huge glass roof adds a touch of brilliance to the restaurant. We look up at the light well and a sexy crew of ancient statues, we admire the squadra in cucina in a large open kitchen, and we comfortably settle in beautiful banquettes to the sound of the best Italian hits.

At the top floor, past the ultra bright bar with hundreds of bottles where Alessandro and his team shake up cocktails just for you, we continue the journey to another century, another Italian story, that of Diego Maradona. A golden kid who has his own floor dedicated to him, the number 10 whom the squad wanted to pay tribute to and who mixes in a completely crazy way with a dedication to the legendary Milanese builder, Alfa Romeo. That's also what Palatino is all about: a long declaration of love to mythical figures of Italy. The decor is imagined, hunted and put in place by the in-house design team, Studio Kiki. Who once again did a sharp job. The must-haves of Italian cuisine On the menu, incredibly generous and authentic dishes, just like in the best Roman trattorias, the ones you only find at the end of an old cobbled street behind the Colosseum.Here, the classics of Italian cuisine flirt with Bordeaux's seafood, all twisted up with a Big Mamma sauce like the Poulpe it up, a lively grilled octopus on a feisty chickpea hummus that only Chef Andrea Assogna knows the secret to. And let's not forget about the best Neapolitan pizzas like the Moment of Truffe with ricotta and fresh seasonal truffle or the Bitcheese topped with fior di latte mozzarella, parmesan, gorgonzola, and dried bonito shavings on top. But that's not all. Max, the king of pizza, serves up a lighter dough than ever before, made with "autolysis," a brand-new fermentation technique. As for secondi, we are in awe of the decadent maritozzo, a plump homemade Roman brioche stuffed with lamb meatballs. It drives us completely crazy...

And since our greedy side is getting the best of us, we let ourselves be delighted by a divine sweet note. The iconic desserts of Big Mamma, like the Tigramisu, the classic dish of the house served in Fima Deruta plates or the incomparable dark and milk chocolate tart, salted butter caramel, crispy praline, coffee and hazelnut. As for drinks, the bar is set high here too. From must-try classics, bubbles, a wine list that is 80% organic, and cocktails that shake things up. We are still torn between the Palatino Sour, pineapple and hibiscus-infused pisco, and the Pom Pom Pom Margarita, elderflower emulsion, apples, and lime. Our hearts are wavering between the two choices ...
