A pastry chef from the Gironde has just been crowned Champion of France for Dessert 2026!

On March 19, 2026, Adrien Salavert was crowned French Dessert Champion in Gérardmer, after an intense final featuring 8 of the best pastry chefs in the country. 

Little time, lots of talent

After winning the regional selection in January, the chef represented the Centre West region at the national final. The competition posed a double challenge: to present a selected dessert, and then to create a second one from a surprise basket.

The candidates had 4 hours and 30 minutes to craft their creations, after 20 minutes of analyzing the ingredients. This year's theme was: a dessert centered around “eating sauce,” with a specific focus on roasted pear or apple.


Two creations that captivated the jury

To impress, Adrien Salavert presented a selection dessert titled «Between meadow and orchard», made with kiwi, nettle, and cream cheese, featuring ingredients sourced from local producers around Saint-Émilion.

In response to the surprise basket, he crafted a dish centered around pear: roasted pear with butter and honey, cardamom sorbet, caramel gavotte, and a complex sauce combining apple, sabayon with yellow wine, and macadamia nuts. This proposal was praised for its creativity, balance, and technical mastery.

Adrien Salavert, a chef with a remarkable journey

Pastry chef at the restaurant Les Belles Perdrix de Troplong Mondot, Adrien Salavert champions a pastry rooted in local tradition, seasonal products, and a delightful taste experience.


Arriving in 2021 alongside Chef David Charrier, he quickly established himself as one of the rising talents of the French pastry scene. Originally from Périgord, Adrien Salavert trained at prestigious places like the InterContinental Bordeaux and Haaitza in Arcachon. Today, he creates desserts known for their precision, simplicity, and creativity, waiting to be discovered at Belles Perdrix and at the bakery-pâtisserie La Petite Perdrix in Saint-Émilion.
