Originally from Saint-Émilion, this 27-year-old restaurateur has explored Asia, even living there multiple times, especially in Thailand. It was there that he discovered the very essence of flambéed sushi before bringing it back to Bordeaux. Each recipe is an invitation to travel, a tribute to the cultures and flavors he has experienced.
The sushi at Blaze Trip is truly one-of-a-kind! Their best-sellers, like the "tuna, truffle, and caviar", the "duck with apple marmalade and pine nuts", and the "Thai dauphinoise beef", showcase the chef's creativity, mixing traditional ingredients with unique twists. In winter, delightful dishes like the "shrimp, raclette, and garlic parsley" or the "forest tuna with spinach pesto, a medley of mushrooms, and wild apples" warm the hearts of the people of Bordeaux. Blaze Trip offers a gourmet menu for €50 consisting of 12 prestige sushis, a side dish of your choice, a homemade dessert (mochi or fruit sushis), and a seasonal drink. Those on a tighter budget can opt for the mystery platter for €35, letting themselves be surprised by personalized creations tailored to their tastes and dietary preferences. Sushis are also available à la carte by pairs; count on €4.30 for 2 traditional sushis, €5 for flambéed ones, and €10 for prestige sushis.

The Asian-inspired decor enhances this sensory immersion. Intimate, warm, and filled with greenery, the space has just 17 seats to ensure that every guest receives special attention. Here, nothing is rushed; everything is done to "take the time to savor," as the chef shares with us.
